To play 21, the goal is to amount your card values as near to 21 as possible without exceeding or 'busting' it. You have to beat whatever hand both the dealer and other players have drawn; if they have 20 and you have 19, you lose the hand. After shuffling the deck, deal each player, including the dealer, two cards - both face down. After all cards are dealt, all players may look at their two cards and add up your cards' total. "Hitting" is optional but could help you win the hand if your initial deal was a low value, and it is requesting another card from the dealer which is shown by tapping your index and middle finger together on the table when it is your turn. You may Hit any number of times in one turn until you are satisfied with your card total or bust. "Staying" is keeping the hand you've been dealt, and it can be done as soon as you are satisfied with your card count, by doing a single motion wave with the palm of your hand facing down to the table. After each player's first turn, bets may be raised and therefore matched or folded at each player's discretion. Once all bets are final, the dealer reveals their second card and hits or stays their hand appropriately. At this point, all other hands are revealed, and a winner or winners is/are determined.

The game begins with one player calling the direction of play by saying, "I propose a game of XXXX! To my left..." or "To my right..." followed by a sequential series of numbers beginning with one. Players are arranged in a circle, facing inwards. As the game progresses, each player in turn must recite one to four numbers, counting in sequence from where the previous player left off: Saying one number (e.g. "one") passes the game to the next player in the circle in the initial direction. Saying two numbers (e.g. "one, two") passes to the next player, but reverses direction. Saying three numbers (e.g. "one, two, three") passes in the initial direction, but skips a player. Saying four numbers (e.g. "one, two, three, four") reverses direction and skips a player. If a player makes a mistake, then they suffer a small to moderate drinking penalty (e.g. 2 fingers of drink) and then restart the game from 1. The game progresses by counting up from 1 to 21, with the player who calls "21" suffering a drinking penalty before the next round starts. The loser may add 1 new rule to the game, and starts the new round.

Players sit in a circle, placing their right hand in front of the next player's left hand. Someone starts saying 'One' and bringing her right hand across to hit the right hand of the player on her left, who says 'two' and does the same thing to the next player who says 'three' etc. etc. The count goes on until someone's hand is clapped on 21 - that player is out. On the final shake, they hold out any number of fingers. Someone counts around the fingers until they get to 21. The person whose finger is 21 is 'It'. Players stand in a circle and say the rhyme: TWENTY-ONE IS IT, BANANA SPLIT! while shaking both their hands in front of them. When they say the last word they bring one hand forward and hold out any number of fingers. Someone counts around the fingers until they get to 21. The person whose finger is counted 21 is 'It'.
